The CVap® HOV7-14UV Holding Cabinet (shown with optional glass doors) is our largest holding cabinet, with the capacity to hold up to 14 sheet pans, or 28 hotel pans. It’s perfect for high-volume operators, and a perfect companion for our retherm ovens. Put’em together for a perfect pair.
The HOV7-14UV is more than just a heated holding cabinet. This full-size model is equipped with C-Touch Controls, CVap Wireless Programming, USB HACCP Data Download, and Switchable Convection.
You can hold just about anything in an HOV7-14UV. Big proteins, veggies, baked goods, from crisp to soft and moist, and everything in between. CVap Holding Cabinets hold it at the temperature and moisture level you want, for extended periods of time. You can cook ahead of the rush – crisp foods stay crisp, and moist foods stay moist.
CVap technology’s precision makes it ideal for proofing. Low, moist heat helps accelerate the rising process. CVap keeps the temperature low and stable, so the yeast can really get down to the business of rising, without temp fluctuations.

Cabinet height is calculated with standard caster size. If 3” caster is standard, subtract 2.48″ (63mm) for 1.5″ wheels, add 2.31″(59mm) for 5″ casters, subtract .25”(6mm) for 4″ legs, and add 1.63″(41mm) for 6″ legs. If 5” caster is standard, subtract 2.31”(59mm) for 3” casters, and subtract .69”(18mm) for 6” legs.
