We discuss the science and importance behind dialing in precise temperatures to garner ideal food textures, consistencies, and efficiencies. In addition, we’ll cover the differences in wet bulb vs. dry bulb. The goal is to promote a deeper understanding of different technologies and terminologies. Also covered, the performance and differences between cooking systems, showcasing innovative uses for cooking and holding equipment.
