HOV2-10UV Holding Cabinet

The sweet spot between capacity and accessibility. The CVap HOV2-10UV holds 10 sheet pans, 20 half-sheet pans, or 20 hotel pans while drawing just 15 amps from a standard 120V outlet. Perfect for school cafeterias, healthcare facilities, and satellite kitchens that need real holding capacity without the electrical infrastructure, or the crappy results you get from basic hot boxes.

Built for operations that were told, “Your electrical won’t support that.” Now it will.

The maximum operating vapor temperature of +/- 185°F (85°C) is based on a standard HOV configuration with solid doors and typical product loading. Units with optional flip or pass-thru doors, or loaded to full capacity, may result in slightly lower operating temperatures (vapor and air). Please consult with a Winston Sales Representative to find the right product for your applications.

CVap technology’s precision makes it ideal for proofing. Low, moist heat helps accelerate the rising process. CVap keeps the temperature low and stable, so the yeast can really get down to the business of rising without temp fluctuations. You can hold about anything in a CVap Holding Cabinet: big proteins, veggies, baked goods, from crisp to soft and moist, and everything in between. CVap Holding Cabinets hold it at the temperature and moistness level you want, for extended periods of time. You can cook ahead of the rush – crisp foods stay crisp, and moist foods stay moist.

Cabinet height is calculated with standard caster size. If 3” caster is standard, subtract 2.48″ (63mm) for 1.5″ wheels, add 2.31″(59mm) for 5″ casters, subtract .25”(6mm) for 4″ legs, and add 1.63″(41mm) for 6″ legs. If 5” caster is standard, subtract 2.31”(59mm) for 3” casters, and subtract .69”(18mm) for 6” legs.

What is CVap?

CVap (or Controlled Vapor Technology) is a patented dual heat system that uses a combination of moist vapor heat and dry air heat to control food temperature and texture.
