Undercounter holding with CVap technology and zero electrical drama. At 35.91″ tall, the HOV2-04UV slides beneath standard countertops while holding four sheet pans or eight hotel pans. The 15-amp, 120V plug means you don’t need to call an electrician or upgrade panels; simply plug in and go.
Food trucks, older buildings, tight concession setups, anywhere you need better holding than a standard hot box, but can’t justify expensive electrical work.

The maximum operating vapor temperature of +/- 185°F (85°C) is based on a standard HOV configuration with solid doors and typical product loading. Units with optional flip or pass-thru doors, or loaded to full capacity, may result in slightly lower operating temperatures (vapor and air). CVap technology’s precision makes it ideal for proofing. Low, moist heat helps accelerate the rising process. CVap keeps the temperature low and stable, so the yeast can really get down to the business of rising without temp fluctuations. You can hold about anything in a CVap Holding Cabinet: big proteins, veggies, baked goods, from crisp to soft and moist, and everything in between. CVap Holding Cabinets hold it at the temperature and moistness level you want, for extended periods of time. You can cook ahead of the rush – crisp foods stay crisp, and moist foods stay moist.
Cabinet height is calculated with standard caster size. If 3” caster is standard, subtract 2.48″ (63mm) for 1.5″ wheels, add 2.31″(59mm) for 5″ casters, subtract .25”(6mm) for 4″ legs, and add 1.63″(41mm) for 6″ legs. If 5” caster is standard, subtract 2.31”(59mm) for 3” casters, and subtract .69”(18mm) for 6” legs.
